SharpEdge Shop and Suncraft, one of the biggest Japanese knifemakers, collaborated on a new knife collection named 耕平新松 in honor of the Suncraft founders' great-grandfather Shin-Matsu and grandfather Kou-Hei.

Since Japanese blacksmiths are the best blacksmiths in the world, possessing centuries of knowledge and experience of forging steel, it made perfect sense to make our knives in Japan. From idea to design, after many conversations with knife makers, trial&errors, finding the right steel and handles, visits to Japan, the process of making a new knife design lasts approximately two good years.

When selecting which steel to choose for a specific knife, we look at the steel features such as hardness, the ability to hold a sharp, smooth edge for a long time, ease of maintenance, the graininess of steel, how easy it is to sharpen, and finally the price and availability of the steel. We selected a range of the very best Japanese steels such as VG-10, SG2 and ZDP-189 because the composition and microstructure of this materials ticked all of the boxes.

Our knives feature a signature K-tip and a traditional wa-handle. The slim blade profile and hard Japanese steel provide a winning combination of smooth and long-lasting sharpness, precise cutting and comfortable and fast work.

From multipurpose knives to prosciutto knives, our collection embodies all of our knowledge and years of experience presenting Japanese kitchen knives to knife lovers around the world. Primarily designed for use in home kitchens, although we are sure they will be wielded by many professional chefs.

Innovation & tradition

Suncraft is a family company spanning four generations and specializing in the production of kitchen tools. The smithy was founded in 1948 and is located in a thriving manufacturing area of Seki in Gifu prefecture, where steelwork dates back to the times of the Samurai warriors.

Suncraft's main factory employs more than 50 workers who are all skilled craftsmen and knife sharpeners. Many of them, like Akira Ozawa and Arihiro Horibe, have been working in the factory for more than three decades and are important for passing on traditional knowledge to the younger generation of blacksmiths.

The knife production is based on 800 years of tradition in Japan, but Suncraft is also focusing on advanced technologies and constant improvement of their knives and materials used in the manufacturing processes. When traditional knowledge is taken into account in production and upgraded with innovative methods, the best knives in the world are created.
